Apricots are small, golden orange fruits, with velvety skin and flesh: not too juicy but definitely smooth and sweet. Their flavor is almost musky, with a faint tartness that is more pronounced when the fruit is dried. Some people think of the flavor as being somewhere between a peach and a plum, fruits to which they’re closely related.
When choosing apricots, look for plump, orange fruits. Some will have a beautiful reddish blush. When they are ripe, apricots should yield to gentle pressure. Many varieties of apricot ripen from the center pit (or stone) outwards, so you should never let apricots get too soft.
To halve apricots, cut down to the pit around the longitudinal seam and twist the two halves to separate them. Dip peeled or cut-up apricots into diluted lemon juice to keep them from browning. If you need to peel them for a recipe, do so by dropping the fruits in boiling water and blanching them for just 15 to 20 seconds, then removing them and cooling them under cold water or by submerging them in ice water. Use a knife to pull away their skin; it should slip right off.
